Never clean the griddle pan in a dishwasher or use detergents to clean it. 3- Towel dry immediately and apply a light coating of oil while still warm to keep seasoned and prevent any rusting. Cast iron is naturally non-stick so there is no 'coating' on this pan. If you experience surface peeling it is not the non-stick surface coming away, it is burnt oil and may be the result of insufficient cleaning or over oiling during seasoning.
