Calasparra Brown Rice has been stored unpeeled to achieve optimum conservation. The husking process is carried out in stages according to its consumption. The quality and prestige of the calasparra rice are a consequence of the characteristics of the area where it is grown: the purity of the water, the particular arrangement of small plots in mountainous and broken areas of the Segura river and its tributary the Mundo river, the use of selected seeds and especially the organic farming system, which does not exhaust the richness of the soil. This rice needs more water than others for its special qualities, which means that more servings are obtained with the same amount of raw. For its preparation: Wash the rice in a container full of water, stirring by hand, place under the tap, put 1 part of rice with 1 and 1/2 of cold water in the pot, cover and put on the fire. Boil for 10 minutes over moderate heat, cook for 40 minutes over very low heat. Rest for 10 minutes with the fire off. Uncover and serve. FALL
