Parsnip White Gem (Pastinaca sativa): The ‘White Gem’ variety of Parsnip is delicious, with white flesh and skin. These medium-sized roots taste wonderful when fried, roasted or stewed, making parsnips a versatile ingredient. A traditional winter vegetable producing medium sized ivory coloured sweet tasting roots. Delicious roasted. Outdoor Planting: Sow seeds thinly 1.5cm deep direct in growing bed in rows 12" (30cm) apart. Keep the soil moist, and be careful not to overwater. When large enough to handle thin to 6" (15cm) apart. Harvest when the leaves have died back, although it is best to wait until after the first frosts, as the flavour improves with the cold weather.
